Hi Lovelies…here’s a quick recipe for red beans and rice..cooked in the crosckpot!!! Yay!! Ingredients: 1 pound small dried red beans, soaked overnight 1 cup chopped onion 2 tablespoon of garlic, minced 1 bay leaf 1 tsp cajun seasoning 1 pound of smoked Kielbasa sliced and cubed. 1 and 1/2 quarts of water (or enough water to cover) your favorite rice Preparation: In crockpot, combine everything except the sausage. Add enough water to cover (approx 1 1/2 quarts water). Cook on high for 7 hours. Toss in the sausage and cook for 1 more hour. Season with salt and pepper to taste…serve with rice. This will serve 8-10 people.
